Ingredients

Main Ingredients

  • 1 cup cottage cheese Can substitute with Greek yogurt for a different texture.
  • 2 cups blueberries Fresh or frozen blueberries can be used.
  • 1/2 cup rolled oats You may substitute with granola if desired.
  • 2 tablespoons honey or maple syrup Adjust to taste.
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking powder
  • 1/2 teaspoon cinnamon
  • pinch salt
  • 2 large eggs Optional for extra protein.
  • Toppings (e.g., nuts, seeds, or additional fruit) Choose according to preference.

Instructions

Preparation

  • Preheat the oven to 350°F (175°C).
  • In a bowl, mix the cottage cheese, rolled oats, honey, vanilla extract, baking powder, cinnamon, and salt until well combined.
  • Gently fold in the blueberries.
  • If using, beat the eggs and add them to the mixture for extra protein.
  • Pour the mixture into a greased baking dish.

Baking

  • Bake in the preheated oven for about 25-30 minutes or until set and slightly golden.
  • Let cool slightly before serving.
  • Enjoy warm or chilled, topped with your choice of nuts, seeds, or additional fruit.

Notes

Keep an eye on the baking time! Ovens can vary, and while you want the top to feel set, a slight jiggle in the center is fine—this means it’ll firm up as it cools. You can prepare the mixture the night before and let it sit in the fridge, ready to pop in the oven first thing in the morning.
