  • 2 cups cottage cheese Use small or large curd
  • 1 cup blueberries Fresh or frozen
  • 1 cup oats Old-fashioned rolled oats recommended
  • 1/2 cup milk Any type of milk is fine
  • 1/4 cup honey or maple syrup Choose whichever sweetener you prefer
  • 3 large eggs Room temperature preferred
  • 1 teaspoon vanilla extract Pure vanilla for best flavor
  • 1/2 teaspoon baking powder Ensures the bake rises
  • 1/2 teaspoon cinnamon Adjust to taste
  • 1 pinch salt Enhances flavor

Instructions
 

Preparation

  • Preheat oven to 350°F (175°C).
  • In a large bowl, mix together cottage cheese, milk, honey, eggs, and vanilla extract until smooth.
  • Stir in oats, baking powder, cinnamon, and salt.
  • Gently fold in blueberries.
  • Pour mixture into a greased baking dish.

Baking

  • Bake for 25–30 minutes or until set and lightly golden on top.
  • Allow to cool slightly before slicing and serving.

Notes

Leftovers keep well for about 3 days in the fridge. You can reheat individual slices in the microwave or a low oven. This bake can also be doubled and made in two pans for larger gatherings.
