  • 2 cups cooked broccoli, chopped into small pieces
  • 1.5 cups shredded cheddar cheese
  • 0.5 cup breadcrumbs (preferably panko for extra crispiness)
  • 2 large eggs
  • 1 tablespoon olive oil
  • 0.5 teaspoon garlic powder
  • 0.5 teaspoon onion powder
  • to taste Salt and pepper
  • 2 tablespoons grated Parmesan cheese (optional)
  • 1 tablespoon fresh parsley, chopped (optional)

Preparation

  • Cook the broccoli until fork-tender, about 5-7 minutes in boiling water. If using leftover broccoli, chop it into smaller pieces.
  • In a large bowl, combine the chopped broccoli, cheddar cheese, breadcrumbs, eggs, olive oil, garlic powder, onion powder, salt, and pepper. If using, add the Parmesan and parsley. Mix until well combined.
  • Scoop out a spoonful of the mixture and roll it into a ball about the size of a golf ball. Place on a lined baking sheet.
  • Preheat oven to 400°F (200°C) and bake the balls for about 20-25 minutes, or until golden brown and crispy.
  • Serve warm; they also taste great at room temperature.

Notes

These cheese balls can be prepared ahead of time. Form the balls and store them in the fridge for a day or two before baking. You can also freeze them for later use. Bake directly from frozen, adding extra time to the bake duration.
