  • 1 lb ground beef You can replace with ground turkey or chicken if desired.
  • 4 cups potatoes, diced You can use pre-cut potatoes to save time.
  • 1 cup cheddar cheese, shredded Feel free to mix with other cheeses like mozzarella or pepper jack.
  • 1 large onion, chopped
  • 1 can cream of mushroom soup Other cream soups can also be used.
  • 1 cup milk
  • to taste salt and pepper
  • optional garlic powder and paprika Add for extra flavor.

Preparation

  • Preheat the oven to 350°F (175°C).
  • In a skillet, brown the ground beef and chopped onion over medium heat, draining any excess fat.
  • In a large bowl, combine the cooked beef, diced potatoes, cream of mushroom soup, milk, and your favorite spices; mix until well blended.
  • Transfer the mixture to a greased baking dish and sprinkle with shredded cheddar cheese.
  • Cover the dish with aluminum foil and bake for 45 minutes.
  • Remove the foil and bake for an additional 15 minutes, until golden brown.
  • Allow to cool for a few minutes before serving.

Notes

Customize with leftover veggies or serve with a side salad or bread for a complete meal. Leftovers can be stored in an airtight container in the fridge for 3-4 days.
