  • 10 oz fresh spinach, chopped (or two cups frozen spinach, thawed and drained well)
  • 8 oz cream cheese, softened
  • 1/2 cup sour cream
  • 1/2 cup grated Parmesan cheese
  • 1 cup shredded mozzarella cheese
  • 1/2 cup cooked bacon, crumbled (use turkey bacon if preferred)
  • 2 cloves garlic, minced
  • Salt and pepper, to taste
  • Optional: red pepper flakes, for a bit of heat

Preparation

  • Preheat your oven to 350°F (175°C).
  • In a large skillet over medium heat, sauté garlic until fragrant, about 1 minute.
  • Stir in the chopped spinach, cooking until wilted, approximately 2-3 minutes.
  • In a mixing bowl, combine the cream cheese, sour cream, and Parmesan cheese until smooth.
  • Add the spinach mixture, mozzarella cheese, crumbled bacon, salt, pepper, and red pepper flakes, if using.
  • Transfer the mixture to an oven-safe dish and smooth the top.

Baking

  • Bake for 25-30 minutes, or until the top is golden and bubbly.
  • Allow the dip to cool for a few minutes before serving.

Notes

This dip can be prepared in advance and stored in the fridge. Let it warm up a bit before baking. You can substitute ingredients as needed, such as using kale instead of spinach.
