  • 1 cup grated cheese (such as parmesan or cheddar) Feel free to substitute with any cheese you like.
  • 1 tablespoon olive oil

Preparation

  • Preheat the oven to 375°F (190°C).
  • In a bowl, combine chopped spinach, grated cheese, olive oil, salt, pepper, and any optional spices.
  • Mix until the ingredients are well combined.
  • Drop spoonfuls of the mixture onto a lined baking sheet, spacing them apart.
  • Flatten each spoonful slightly with the back of the spoon.

Baking

  • Bake in the preheated oven for 10-15 minutes or until the edges are golden brown and crispy.
  • Let cool for a few minutes before serving.

Notes

These crisps shine best when freshly baked, but can be stored in an airtight container for a couple of days. Reheat in the oven to restore crunch. You can also prep the spinach and cheese mixture ahead of time and store it in the fridge for a day.
