  • 4 large russet potatoes
  • 2 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1/2 cup grated Parmesan cheese
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon paprika
  • 1 tablespoon fresh parsley, chopped (for garnish)

Preparation

  • Preheat your oven to 425°F (220°C).
  • Wash and cut the potatoes into wedges and place them in a large bowl.
  • Pour olive oil over the wedges and add minced garlic, salt, pepper, and paprika. Toss well to coat evenly.
  • Spread the potato wedges in a single layer on a baking sheet.
  • Sprinkle grated Parmesan cheese on top.
  • Bake for 30-35 minutes or until golden and crispy, flipping halfway through.
  • Remove from the oven and garnish with fresh parsley before serving.

Notes

These wedges can be made ahead for potlucks. If using leftovers, they crisp nicely when reheated in a skillet with a splash of olive oil.
