  • 1/2 cup diced bell pepper Any color bell pepper
  • 1/4 cup red onion, chopped Adjust quantity to taste
  • 1/4 cup Kalamata olives, pitted and sliced Adds briny flavor
  • 1/4 cup feta cheese, crumbled For topping

Dressing

  • 2 tablespoons olive oil Extra virgin recommended
  • 1 tablespoon red wine vinegar

Preparation

  • In a large bowl, combine the cottage cheese, cucumber, tomatoes, bell pepper, red onion, olives, and feta cheese.
  • In a small bowl, whisk together olive oil, red wine vinegar, salt, and pepper.
  • Pour the dressing over the salad and toss gently to combine.
  • Garnish with fresh parsley.

Notes

This salad is best served fresh. If you have leftovers, store them in an airtight container in the refrigerator for up to two days. Keep the salad dressing separate from the salad to avoid sogginess.
