  • 2 cups diced fresh pineapple Can substitute with canned pineapple if fresh is unavailable.
  • 1 large English cucumber Or use 2 Persian cucumbers, diced.
  • 1/4 small red onion Sliced thinly for a mild onion flavor.
  • 1/4 cup chopped cilantro leaves Can be omitted if not preferred.
  • 1 small jalapeño Sliced thin (optional, for heat).
  • 1/4 cup feta cheese Crumbled (optional, for saltiness).

Dressing Ingredients

  • 2 tbsp lime juice Freshly squeezed for best flavor.
  • 1 tbsp honey Or substitute with maple syrup.
  • 1 tbsp olive oil
  • 1/2 tsp salt
  • 1/4 tsp ground black pepper
  • 1/2 tsp crushed red pepper flakes Optional, for added spice.

Instructions
 

Preparation

  • In a large bowl, combine the diced pineapple, cucumber, sliced red onion, and chopped cilantro.
  • If desired, add the jalapeño for a touch of spice.

Dressing

  • In a separate small bowl, whisk together the lime juice, honey or maple syrup, olive oil, salt, black pepper, and crushed red pepper flakes until well blended.

Assembly

  • Drizzle the dressing over the salad mixture and toss gently to coat all ingredients.
  • Before serving, sprinkle feta cheese on top if using.
  • Taste and adjust seasoning, adding more lime juice or salt if preferred.
  • Let the salad sit for about 10 to 15 minutes before serving to allow flavors to meld together.

Notes

This salad can be made a few hours in advance. If preparing the night before, keep the dressing separate until serving time for optimal freshness.
