  • 1 package frozen tater tots
  • 1 cup diced bell peppers
  • 1 cup diced onions
  • 1 cup chopped spinach or kale
  • 1 cup plant-based milk
  • 1 tablespoon nutritional yeast
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • to taste salt and pepper
  • 1/2 teaspoon paprika
  • 1/2 teaspoon turmeric (optional)
  • Fresh herbs for garnish (optional)

Preparation

  • Preheat your oven to 425°F (220°C).
  • In a large mixing bowl, combine the diced bell peppers, onions, spinach, plant-based milk, nutritional yeast, garlic powder, onion powder, salt, pepper, paprika, and turmeric. Mix well.
  • In a greased 9×13-inch baking dish, layer the tater tots evenly on the bottom.
  • Pour the vegetable mixture over the tater tots, spreading it evenly.
  • Bake in the preheated oven for about 30-35 minutes or until the tater tots are golden brown and crispy.
  • Remove from the oven and let cool slightly. Garnish with fresh herbs if desired.
  • Serve warm and enjoy your hearty vegan breakfast casserole!

Notes

You can prepare this casserole ahead of time. If making the night before, cover and refrigerate. Add 10 extra minutes to the baking time. Leftovers can be reheated, and they make a great lunch option with avocado or fruit.
